The harvest at La Rose Pauillac consists of a careful selection of different grape varieties and vineyard plots. These grapes produces a range of wines that differ considerably and suit every occasion.
 After fermentation, certain vats are blended and aged separately. Such wines are sold under "Sélection des Viticulteurs" or "Cuvée Bois de Rose" labels, which can be recognized thanks to a golden sticker.
Oak barrels are supplied by the best French coopers. A third of these are replaced every year, and every barrel is tasted regularly in order to find the ideal balance between oaky and fruity flavours.
The semi-underground cellar ensures a cool, even temperature conducive to good ageing.
Traditional ageing, which includes such operations as racking by candlelight and topping up, smoothes the tannins and focuses the unique quality and longevity typical of Pauillac.
Ageing lasts for at least 1 year.
