 The wines of Pauillac are both rich and smooth, with a beautiful colour. They have a wonderful bouquet, are well balanced, and keep very well. Pauillac is perfect with red meats such as the famous entrecôte bordelaise cooked over vine cuttings, as well as game and hard cheeses.
Older vintages, that have reached their peak after a decade or so, make a wonderful accompaniment to game, stews, and the famous Pauillac lamb.
Depending on whether it has been aged in barrel or in vat, young Pauillac is ideal with simple, tasty food while older Pauillac is a treat with more elaborate and refined dishes.
